A few months ago, I was reading some blogs that talked about Meatless Mondays. Serving a meat-free meal once a week. I could dig it whatever the reason whether health or environmental or just being a little more frugal. So I announced to Stephen my plans for a “Meatless Monday” meal sometime during the week. This week it landed on Wednesday. I had clipped a recipe out of Cooking Light a long time ago for Double-Bean Burritos. I moved that little piece of paper around so much I couldn’t find it when it came time to cook dinner so I used our new iPad to display the recipe. Woot!

I set Kate at the table with some crayons and paper and she went to town while I whipped up dinner.
{side note: The kids detest beans so they ate grilled cheese sammies with cantaloupe}

we got meatless a couple of dinners a week. and most lunches for me. i just need some more options with my meatless dishes. this one looks great! please share weekly! is that asking too much? possibly, huh.
